Story No. 3:

Summer evenings in Sāri couldn’t be that joyful without Halī Qūrū. I remember sitting in our little garden with my family, chatting and enjoying each spoon of this magical stew.

I truely believe that it has all summer flavors of Māzandarān in itself.

 

The loveliest memory about Halī Qūrū is about my grand father and his passion for it. I clearly remember him sitting near my mom asking her secretly:

حوری جان! هنوز هلی بازار دله نیامو؟

 

which means: “dear Hoori (my mom) aren’t green plums available in bazaar yet?

It was always his very singular trick to ask for his favorite food by the way!

On the other side, as other children, I preferred to eat green plums just raw and with a pinch of salt rather than cooked ones.

 

Of course as the youngest one, I was the one who were supposed to give up! It was such a deep pain in my heart as my mom was cooking them because I didn’t have any chance to rescue them …

 

So as I’m your grand daughter, grandpa, I have the same passion for Hali Qūrū as you had. Now that you you are not with us anymore, I promise that I’ll have an extra spoon for you!

Ingredients:

 

- 1 kg. "Halī" (green plums)

- 1 L water

- 1 Table spoon fried onions

- 1 Table spoon fried garlics

- 2,3 Table spoons chopped dried mint

- sugar

- salt and pepper

 

Instruction:

 

- Boil green plums with water until they are completely soft

- dain and press them to have all their juice

- cook the sauce on a med. temperature until its thick enough

- add fried onions and garlics

- add sugar, salt and pepper to have sour-sweet taste in the end

- when all the ingredients come together, add 2-3 eggs and cover the pot

 

- after 10 min. your "Halī Qūrū" is ready to serve
